Flavour and heat
The sauce has plenty of sweetness from brown sugar, honey and sugar, but it stays balanced by distilled vinegar, lime juice and spices. Scotch Bonnet brings that fruity Caribbean heat, while chipotle adds smoke and depth.
How to use it
Use it as a glaze on salmon, chicken or pork, as a dip for fries and nuggets, or brush it onto grilled food in the final minutes so it caramelises beautifully. It also works brilliantly with shrimp skewers, pulled chicken, burgers and bowls.
